Veggie rice dish

I'm back after more than a month and I'm sorry but I wanted to enjoy the break and be able to see my family and friends. In Spain we don't receive gifts in christmas day (well, some of the kids yes) because we do on January 6th "Los tres reyes magos" the literal translation is "The three magic kings" but I think they actually call it "The three wise men", that's another reason I wasn't here before. Also I have to study and do so much stuf like that (not enjoyable at all I know). But... HAPPY NEW YEAR TO ALL MY LOVEY READERS ! (and if you're new welcome and I hope you like it).

During this break I've been practicing my cooking skils (and it you know me, you'll know that I'm a disaster in the kitchen), but I've been trying and improving this new super easy recipe that any one (even me) can do it. I've realised that even if you're vegetarian or even vegan it's also for you and I thing that's great (but I'm not, I love meat and fish too much to give that up sorry).

Of course it's a very adaptable recipe, if you don't like something or want to add another one it's perfectly fine and I'd love to know how you did it (so I can maybe try it too)

You will need:
- Half a glass of rice
- A tomato (if it's too big I only use half of it)
- Green, red and/or yellow pepper (as you decide but I only had green, sorry)
- Onion (it's optional and add as much as you want)
- Soy sauce
- A pan
- A small pot
- A wooden spoon
- A knife

You put the rice to the pot, for every unit of rice you'll add 3 of water (only with this rice, usually it's only 2) with a bit of olive oil and salt. For 5 minutes you'll have it on a high temperature and the next 10/15 on a low one (check after 10 minutes to know when it's ok to eat)

With a high temperature and a bit of olive out you'll add the pepper first to the pan (because it's the hardest one and it takes more time to cook).

When it's more or less done you'll add the onion to the mix till it's almost done.

Finally you'll add to the pan the tomato for a few seconds, maybe a minute or two (that depends on how you like it) and the mixture is done.

You add the mixture and the rice to a plate and add the soy sauce (as much as you like, I love it so I add too much)

And you have it !

I hope you liked it and don't forget to let me what you think on the comments. Thank you :) xx
